I'm speaking for myself, not my old friend and colleague, Paul... There's a difference between an NDA (Non-Disclosure Agreement) and a Non-Compete Agreement. And I'll comment no more.

Non-competes can be limited in duration and distance depending on where you are.
Noncompete is always limited duration. I doubt it would stand up in court if it weren't.

Non DISCLOSURE is pretty much forever or until nobody cares. You can't spill the beans on the secret Zildjian alloy just because it's been 15 years since you left. Details of a product launch from 40 years ago is now "history" and I doubt you would be drug into court for spilling the beans about exactly when they switched to the hollow logo stamp
