I've used Coated single ply on my snares for years. I did try out the Fiberskyn series for a while and after changing back to a standard Coated head I thought "WoW" that's the sound I've been missing. For my style of music I like the sensitivity and stick response of a tight single ply head and coated for brush work.
The snare I've used for most of my life is the Ludwig Supra.
I'm really loving my Aquarians right now, especially their Hi-Energy heads. I have them on a deep brass, a deep bubinga and a shallower steel/walnut. These heads are a revelation to me, in sound and feel. Excellent stick response that feels good under the hands, sensitive, a degree of muffling, but not in a deadening way. To me, they really let your drums sing. I tried these after a recommendation on SweetWater, believe it or not. Awesome, amazing head.
I also have a texture coated on my INDe aluminum. I'm still developing a sense for them, but as of right now, I like the feel of their heads better than Remo and Evans.
Other than that I have a wide variety of Evans on the snares -- each one has its purpose to my ear and I try to match it with the right shell to get to the sound in my head. I like their ST Dry, their G2s, G1s, Hydraulic and EC Frosted.
I can't imagine using anything but a coated, single weight head on a snare drum. I like a crisp, dry type sound with lots of sensitivity a bit of resonance and the ability to play with brushes, even if lately I haven't had occasion to use them much. I don't feel that I would get all of that with a heavier head, something dampened or anything without coating. I have seen drummers far better than me who use black dot or other heavier and or per-demapened snare heads and though I'm still often impressed by the playing, I don't usually like the snare sound...
