I noticed that leveling the cymbal was a key part of the Paiste process. I'm on a multi-decade Zildjian kick, and I have to admit that Zildjian cymbals can be really wonky straight from the factory. Good on Paiste for their quality control.

What is important to understand about this company is all the hammering is done manually: either with a manually controlled machine or literally by hand at the end to fine tune the sound and shape of each cymbal.
This is done to all their top line cymbals regardless of the alloy, and this has been done the same way since 1952! No other cymbal company can claim that (UFIP is possibly the exception).
